Creamy potatoes and sausage is an easy-to-throw-together meal that is great for a cool rainy day.

I love to have a few easy-to-throw-together meals in my back pocket for when I need them and actually, I use them quite often.
While on rare occasions I’ll go all out and make a main dish with some sides and a dessert, I most definitely prefer something simple that I can throw together in under an hour and is easy to reheat the next day.
This recipe came about while trying to use up leftovers and what we have the most of still preserved from winter. It has quickly become a favorite around our house.
What You Will Need
- Potatoes – I use canned potatoes, you can use raw potatoes, just cook them beforehand.
- Sausage – I like to make this with hot Italian sausage, you can use any flavor, but the recipe does get a lot of its flavor from the sausage.
Cream Sauce Ingredients: - Butter
- Onion
- Garlic
- Flour
- Milk
- Salt
- Pepper
- Cayenne
- Ginger
- Paprika
How To Make Creamy Potatoes And Sausage
- Thoroughly cook sausage links
- Place butter, onion, and garlic in a pan and saute until onions are tender.
- When the onions are tender, add the flour
- Stir and let cook for a minute
- Slowly add the milk a little bit at a time, stirring constantly while adding.
- Add the spices, turn on low/medium heat to thicken, and stir periodically.
- While the sauce is thickening preheat the oven to 350 F
- Next, grease a 9×13 pan and pour the potatoes into the pan.
- Cut the sausage links into bite-sized pieces and sprinkle the sausage evenly over the potatoes
- When the sauce is thickened pour the sauce evenly over the potatoes and sausage
- Place in oven at 350F for 20 minutes.
- Remove from oven, and sprinkle with green onions if desired.
- Enjoy!

Ingredients
- 3 quarts potatoes
- 4 Italian sausage links
- 4 T butter
- 1 onion
- 2 garlic cloves
- 1/2 c flour
- 5 c milk
- 1.5 T salt
- 1-2 T pepper
- Dash of cayenne pepper
- Dash of ginger
- 1 T paprika
Instructions
- Thoroughly cook sausage links
- Place butter, onion, and garlic in a pan and saute until onions are tender.
- When the onions are tender, add the flour
- Stir and let cook for a minute
- Slowly add the milk a little bit at a time, stirring constantly while adding.
- Add the spices, turn on low/medium heat to thicken, and stir periodically.
- While the sauce is thickening preheat the oven to 350 F

Notes
- You can use ground sausage instead of links and save cutting them up.
- If you don't have canned potatoes, cut raw potatoes and boil them in water until they are mostly soft.
