I love easy one-pot meals, it makes everything simpler and saves me dishes! This one-pot BBQ lentil recipe is perfect for a cold winter day when you want something to warm you up. It also makes the house smell wonderful while it’s cooking!
As someone who doesn’t care for lentils very much, I am always hesitant about lentil recipes. But this is a recipe I love, we make it a couple of times a month in our house! It’s perfect to put on sandwiches, wraps, quesadillas, pizza, and even salad. I like to make a big pot of these so we have plenty of leftovers for a quick meal another time.
My dad helped me alter a lentil recipe a few years ago to make more suited to our taste. I learned a lot about mixing flavors that night and use some of the things I learned all the time now. Before that night I probably never would have thought to put vinegar in recipes, it just sounds like it doesn’t belong in them. I have changed the recipe even more since then and the result is this delicious one-pot BBQ lentils!
What You Need
large pot (I use my cast iron dutch oven for big meals like this one)
dry lentils
oil
1 onion
clove garlic
carrots
tomatoes
apple cider vinegar
maple syrup
mustard
water
Spices:
salt
pepper
oregano
paprika
ginger
chili powder
celery seed
turmeric

Easy One-Pot BBQ Lentil Sandwich Directions
- Cut carrots, onions, and garlic into bite-sized pieces.
- Sauté carrots, onions, and garlic in oil until tender, about 10 minutes

3. Add lentils, all spices, mustard, apple cider vinegar, maple syrup, tomatoes and water.
4. Bring the pot to a boil.
5. Once boiling, turn to low and simmer for about an hour or until lentils are tender.

Tips For Making One-Pot BBQ Lentils
- The smaller you cut your carrots the faster they will cook.
- Soak your lentils for a few hours before cooking them. This reduces the cooking time and makes it easier for your body to absorb their nutrition.
- You can use brown sugar with a 1:1 ratio instead of the maple syrup. I just prefer the maple syrup and it gives it a little different flavor.
- This recipe makes about 5 quarts of BBQ lentils. I like to make a lot and have leftovers for the next few days, but this recipe can easily be halved as well.
Ways To Use Easy One-Pot BBQ Lentils
These lentils are very good in sandwich form, but they have many other uses as well. You can eat them plain or add them to a salad. I like to make quesadillas or quick pizzas for lunches with the leftovers. Or top them with cheese and wrap them in a tortilla for a packable lunch that can be eaten cold. I recently started using them as a chip dip as well. They go nicely both hot or cold with some tortilla chips. These BBQ lentils are good plain, or top them with some cheese to fancy things up.

Ingredients
- 2 T. oil
- 1 onion

- 4 carrots
- 1 T. mustard
- 2/3 c. apple cider vinegar
- 3/4 c. maple syrup
- 1 T. salt
- 1 T. pepper
- 1 T. oregano
- 1 T. paprika
- 1 tsp. ginger
- 1 tsp. chili powder
- 1 tsp celery seed
- 1/4 tsp turmeric
- 2 quarts tomatos
- 2 c. water
- 3 c. dry lentils
Instructions

- Sauté carrots, onions, and garlic in oil until tender, about 10 minutes
- Add lentils, all spices, mustard, apple cider vinegar, maple syrup, tomatoes, and water.

- Put between two slices of bread or on a bun for a tasty sandwich!
