There are not a lot of recipes for cooking goose meat out there, and most of them are for cooking a whole goose. There also seems to be very little variation in the recipes. Roast goose is good, but I don’t want to roast goose every single time I cook a cut of goose, we need variation.
We started butchering geese last year on our farm and plan to do it in the future years. Since we plan on eating geese frequently I needed some recipes that we liked.
Grilled Goose
We love to grill around our house, for the most part, if we are going to eat a cut of meat whole, we grill it. So when I pulled out some goose leg quarters I was going to grill them and set out to find a recipe. I wanted a recipe because goose meat can be hard to cook so it is tender and I didn’t want to ruin it.
I looked and all I could find were recipes for grilled goose breast and that wasn’t what I was looking for. I ended up just throwing them on the grill to see how they would turn out because I didn’t really have a lot of time to mess with them.
They turned out SOOO good and were tender and juicy, with no prep work!
What You Will Need
- Goose Leg Quarters
- A sauce or seasoning of your choice
How To Grill Goose Leg Quarters
- First, you will need to have thawed goose leg quarters.
- Next, start the grill and let it warm up. I just turn all the burners on high for 5-10 minutes.
- When the grill is hot turn it down to medium/low heat.
- Use tongs and place the goose leg quarters top side down on the grill.
- Close the lid and let cook for 8-10 minutes.
- Flip the leg quarters and slather the top with BBQ sauce, other sauce of your choice, or seasonings of your choice.

7. Let cook for another 8-10 minutes or until they reach an internal temperature of 165 F
