Skip the drive-through and make your breakfast burritos at home. You can make these breakfast burritos ahead and freeze them for when needed!

Breakfast burritos are delicious and convenient to eat. They are also convenient to pick up on the way to work if you have to drive by a restaurant. But breakfast burritos are also super easy to make at home and are much healthier and cheaper than what you would buy in the store or get by going through the drive-through.
We eat eggs often for breakfast around our house, they are healthy, quick and easy to make, and taste good. They become even easier if you make a whole bunch of them up and freeze them so you just have to pull them out and heat them in the morning. I like easy breakfasts because my husband works early so the easier breakfast is the more time I have to spend with him.
What You Will Need
- A frying pan
- Eggs
- Any toppings you might want (cheese, salsa, taco sauce, etc.)
- Meat (optional)
- Tortillas
- Saran wrap
- Tin Foil
How To Make Breakfast Burritos
- First, put the pan over medium heat to warm up, you will want the pan hot to prevent the eggs from sticking.
- While the pan is heating, chop any meat if you are adding meat to your burrito.
- When the pan is hot, grease it
- Add the eggs to the pan

5. Top the eggs with salt and pepper
6. Then stir the eggs
7. Add the meat to the pan and stir again

8. Lay the tortillas out
9. Stir the eggs until they reach your desired doneness
10. Then scoop about 1 cup of the egg mixture onto one side of each tortilla

11. Top the eggs with desired toppings
12. Wrap the egg mixture in the tortilla.

13. Serve immediately or follow the directions below to freeze them.
14. If you want your burrito to have a slight crunch to it, bake the finished burrito at 350 F for 5 minutes before serving.

- 1/2 c. Cooked meat (ham, bacon, sausage, etc.)
- 1/4 c. Salsa/taco sauce/hot sauce
- Salt and Pepper

- Top the eggs with salt and pepper
- Then stir the eggs
- Add the meat to the pan and stir again
- Lay the tortillas out
- Stir the eggs until they reach your desired doneness
- Then scoop about 1 cup of the egg mixture onto one side of each tortilla
- Top the eggs with desired toppings
- Wrap egg mixture in tortilla.
- Serve immediately
Notes

- To freeze these, follow the above instructions as normal and then bake for just a couple minutes at 350 F, or fry in a pan for a minute. This will help the burrito hold its shape and make it easier to freeze them.

- Bake at 350 F for 5-10 minutes if refrigerated, 15-20 minutes if frozen. You could also heat them with a microwave for 2 minutes if you don't want to use the oven.

Store your unfrozen breakfast burritos in the fridge for up to 3 days. If you want to store them longer then follow the instructions above to freeze them. Once you remove them from the freezer, store burritos in the fridge for up to 3 days until ready to use.

Homemade Breakfast Burrito Variations
- Add cheese – Cheese goes great in burritos, often we skip the cheese just to make them cheaper, but occasionally we do top them with cheese.
- Add onions and or peppers – Fry some onions and or peppers in the pan before adding the eggs to add some more flavor.
- Top with some avocado – I’m not sure how freezing and then re-heating the avocado would work, but if you are eating these fresh, then avocado slices or guacamole make a good topping.
- Mix some beans with the eggs – We mix beans in with a lot of things, especially proteins to stretch them and make them go further. Eggs are another thing you can add beans to. Either whole cooked beans or in the form of refried beans.
